Can anyone recommend me some software I can use to rip DVDs of TV shows to individual AVIs which will just produce one file per ep without me having to do anything special?

You can probably use Handbrake - They bill it as mainly for ripping to put on devices like iPods or whatever, but you can play with the quality so that it's high or low, depending on where you keep it, and the disk space you have. They have version for all three operating systems.
